Almost Vegan

So tonight I had to scrounge my refrigerator for possible dinner items. You know it is the end of the week and the pantry does lurk towards emptiness, not that I have a pantry and I would love to but that topic would take on an entire post of it's own, I suppose.
Anyway, so I found tomatoes, one eggplant, some mushrooms, potatoes and onions. Yes that is vegan and I had to use these before they met their end through rotting.
So I made and eggplant and potato curry-sorta-thing and some wild mushroom pilaf (thanks to anjum anand's book I own)



Ingredients (Eggplant Curry):
1. One eggplants cubed(small)
2. One large potato cubed(small)
3. One medium onion finely chopped
4. One large clove of garlic chopped
5 Onion seeds 1 tsp
6. 1 tsp cumin pwd, 2 tsp coriander pwd and half teaspoon turmeric pwd
7. One large tomato chopped

In 2 tbsps of cooking oil temper the onion seeds. Then fry the onions till golden brown and then add garlic. Add the seasonings, tomatoes and cook till oil oozes from the sides. Add eggplants and potatoes, cover and cook till tender, splashing water once in a while to prevent it from getting dry.
Sprinkle some coriander leaves if you have it.



Ingredients (Mushroom Pilaf):
1. One cup basmati Rice
2. some mushrooms( I used portobellos)
3. Half an anion finely chopped
4. whole garam masala and 2 bay leaves
5. Cumin seeds 1 tsp
6. salt to taste and 2 dried red chillies
7. broken raw cashews and some raisins


In 2 tbsps of cooking oil temper the cumin seeds, whole garam masala and whole red chillies. Add the chopped onions, cashews and rainins. Fry till lightly browned. Add the mushrooms, salt and garam masala powder. Fry for 4-5 mintues. Then add the rice and water. Cover and cook on low heat till done.


Note: If you soak rice for 30 mins in cold water you need 1 1/2 cups of water for 1 cup rice and if you do not soak rice then you need 2 cups of water for 1 cup rice.

Btw, I bought some Dorset Nagas or Bhut Jolokias as known in India, quite unassumingly. They are thought to be the world's hottest peppers. Don't know about being hottest but it sure as hell burnt my ears. Here I have taken a picture of it for you guys.

Sounds quite tasty...You know it happens when run out off almost all your common combo dishes you come out with an innovative one...that's really nice....

One thing I would like to suggest if you won't mind...try to give your snaps a copyright mark to avoid plagiary. you now a days what kind of net-discourtesy is going on....

Hi kamalika, thanks for the words of encouragement. It's so true that necessity is the mother of invention. In the broader sense, that is why humanity has not invented anything great in the modern age, coz there is no necessity.
About the copyright things, I am really quite lazy and I also do not have an idea about how to do it. You could tell me how to.

Copy wirte is very easy.....
1. If you have picasa there you will see a option called export...when you will click on the export button a seperate screen will apppear and you will see a watermark option there....write whatever you want to write ,like your nname or site name...then press the ok button...you will have the copy write mark on it....
2. In photoshop or in paint also you can do it.... open a desired snap in photo shop or in paint and clicking on text option type the copy write version...save it in JPG file....thats all....
